Hey, y’all! I wanted to share this instant pot salsa chicken recipe that I showed on my Insta Stories last week because it ended up being soo good, soo easy, and really affordable!
With how busy life can get, I like to have cheap and easy meals on hand that I can throw together last minute if needed.
My Instant Pot is my saving grace. Honestly worth every penny to be able to cook dinner in twenty minutes. I use it more than my crockpot now!
Instant Pot Salsa Chicken Recipe
6-8 Chicken Breast Tenders [I like these because they cook quicker but you can also use full size chicken breasts. In that case use half the amount listed above]
1 1/2 cups salsa
1 can black beans drained and rinsed
1 can corn drained
Cumin, garlic powder, and salt to taste [I eyeball and taste as I go]
The night before cooking, marinate chicken breasts in salsa. You can skip this step if wanted, but the chicken is so much more flavorful if they’ve been marinated overnight.
The day you begin cooking, add black beans, corn, chicken and salsa mixture, and spices to your instant pot. Mix together well and cook on High Pressure for 10 minutes [20 minutes if using regular size breasts]. Once done, quick release the pressure and serve on top of rice topped with guacamole.
Super easy, healthy, and I think the groceries cost me maybe $10 total for everything.
